Stir up Saturday! Gluten and Dairy Free

Hello from Finland!!! 

Today's blog is about making a Gluten free Christmas Pudding! Now i'm not a Christmas Pudding fan i'm afraid, but my mum is and as she is Coeliac i thought i'd give this a whirl for Christmas day! 

I found this recipe on www.telegraph.co.uk and it sounds easy and does look brilliant!!! 

Normally my mums friend Sue makes the Christmas pudding for dessert with the lucky sixpence etc and brandy butter etc… but this year i'm thinking maybe if i make it and see what goes in maybe i'll try it and love it! Not the brandy butter though as thats just yuk! 

So as its Stir up Sunday tomorrow - the last sunday before advent it makes it Christmas Pudding day!!! 

Ingredients
100g dark brown sugar
2 tsp mixed spice
1 tsp ground ginger
2 tsp Valencian orange extract
50ml orange juice
75ml gluten-free wine or beer
50g golden linseed, ground to a powder in a blender
200g mixed dried fruit
1 medium carrot, peeled and grated
100g chopped pecans, optional
200g chopped glacé ginger
50g Doves Farm gluten-free plain white flour
50g Sainsbury's Freefrom spread made with sunflower oil, plus a bit more for the basin
75g gluten-free white bread, ground into soft breadcrumbs

1. Get all the ingredients ready. 
2. Grease a pudding bowl and throw in all your ingredients. 
3. Stir it up! This is the part where you can make a wish, it mustn’t be a selfish one.
4. Tip the mixture out into the pudding bowl and pat down firmly with a wooden spoon.
5. Now you have to cover it first in baking paper and then in tin foil.  A brilliant trick to make perfect-sized circular lids: fold a square of baking paper (it needs to be a few inches bigger than the bowl itself) into quarters and then fold into a dart shape. Hold the pointed part of the dart in the centre of your pudding and trim the outside edge to follow the line of the bowl, a couple of inches clear of it. When you unfold it, you’ll have a circle, the right size. Pleat this in the middle and place over bowl.
6. Get your string. Sadly there isn’t a knack for this: wrap the string tightly around the bowl to secure the covers, then once it is secure take the string over the top several times to create a handle (essential for heaving the pudding out of the saucepan).
7. You now need a large saucepan and something to make sure the pudding basin doesn’t touch the bottom. A broken saucer will do, or an old grater, of if you’re a pro you’ll have a proper trivet. And that’s it (for the preparation stages, anyway). Now, when you’re ready, you just need to fill the saucepan three quarters with boiling water and simmer for 3 hours. Store in a cool cupboard or larder (don’t whatever you do remove the foil) until Christmas Day when it will need to steam for another 3 hours or so before serving.
If you’ve any left over after Christmas, which you probably won’t, Dan Lepard recommends frying it in butter and serving it with ice cream.

Method
Whisk together the sugar, spices, orange extract, juice, stout and linseed until smooth.
Stir in the fruit, grated carrot, pecans and ginger then add the flour and mix well.
Pour in the melted spread, add the gluten-free breadcrumbs and stir well.
Grease the inside of a pudding basin with more Freefrom spread, then spoon in the mixture, patting it down as you go. Cut squares of non-stick baking paper and aluminum foil, large enough to easily cover the bowl, pleat them, and with the layers paper-side down, tie them tightly in place around the bowl with string.
Simmer in a boiler for three hours.
Store in a cool place. Do not break the seal or be tempted to remove the lid to look at the pudding. On Christmas day, simmer for another three hours before serving.

Gluten and Diary Free Saturday

Happy Saturday! 

Its a huge day in the Tsamplakos house - we are already on the road on a treasure hunt! For a magical treasure filled present! 

Rocco has recently been diagnosed as having a gluten and dairy intolerance!! 

Hes been gluten and dairy free for over a week now and to be fair its actually been quite easy! We are so lucky to have so many gluten and dairy free choices in our supermarkets!

However some of the biscuits are just gross! yuk! So i'm going to start trying to make my own and see if they taste any better! 

There are so many websites out there! Also look back at our Carrot Cake recipe which is gluten free and could be diary free if you substitute.

I am all for an easy treat to go in Rocco's lunch box and i also love Tiffin!!!! yummmm

So here goes - my first adaptation of a Gluten Free and Dairy Free Tiffin


You will need a 7 or 8 inch square baking tin. Make sure the tin is greased with dairy free butter and put some greaseproof paper on the base to make it easier.

The following quantities can be upped or downed to suit - they don't need to be accurate! This is why its such a good recipe to make with young children! If you don't have any intolerances you can off just remove the words dairy and gluten free and taadaa its a lovely tiffin recipe! 

125g dairy free soya butter
250g gluten free digestive biscuits
4 tbsp golden syrup
3 tbsp high quality cocoa powder
75g raisins
250g dairy free plain/dark chocolate




  1. Pour the golden syrup into a bowl with the dairy free butter and melt in a microwave on high heat for about 1½ minutes (you can also do this on the hob in a pan).
  2. While the dairy free butter and syrup are melting, put the gluten free biscuits in a plastic bag, seal it and bash them up. You don’t want them to crumble to a powder. The chunky bits are the best bits in the tiffin.
  3. Add the cocoa, the raisins and then the gluten free biscuit to the melted dairy free butter and golden syrup. Pour the mix into the tin and spread it evenly, flattening it down as you go.
  4. Melt the dairy free chocolate in the microwave for 2-3 minutes (it will depend on the power of your microwave) – or melt it in a bowl sitting on a saucepan of barely simmering water. Spread the melted dairy free chocolate evenly over the biscuit base and then simply put the dish in the fridge.
  5. The cake will be set and ready to eat within one hour (and gone within two!)
